Roasted Green Beans Ingredients
1 pound green beans, trimmed
¼ cup extra-virgin olive oil
2 garlic cloves, pressed
3 fresh thyme sprigs
Salt and freshly ground pepper
3 anchovy fillets
¼ cup milk
Zest of one lemon
2 to 3 teaspoons fresh lemon juice
How to make Roasted Green Beans
Set a rack close to the top of the oven and preheat to 450˚F. In a large baking dish, toss the beans with the olive oil, garlic, and thyme sprigs. Season to taste with salt and pepper.
Soak the anchovies in milk for 20 minutes, and then drain, mash, and set aside. Spread the prepared green beans in a single layer and roast in the baking dish or on a rimmed baking sheet, tossing occasionally until tender, and lightly browned—about 15 minutes. Discard the thyme sprigs, and transfer the beans to a serving bowl.
Add the anchovies, lemon zest, and lemon juice to the bowl and toss well to coat.
Serve warm or at room temperature. Serves 4.
