Smoked Picnic Shoulder Ingredients

5 to 7 pound pork shoulder

Cooking water

1 cup brown sugar

1 teaspoon dry mustard

½ teaspoon ground cloves

3 tablespoons cider vinegar

2 cups hot water

How to Make Smoked Pork Shoulder

woodmans smoked pork shoulderTrim the pork shoulder, leaving some fat for flavor. Place in a heavy-bottomed kettle and cover with cold water. Simmer for one hour and drain. In a mixing bowl, thoroughly combine the brown sugar, dry mustard, ground cloves, vinegar, and the hot water. Pour over the shoulder, returning to a simmer. Cook until fork tender (about 45 minutes). Remove from the heat, and cool in the liquid before serving. Serves 8.
