Banana Squares Recipe by Bessie Viator

A delicious confection from a member of the extended Woodman family; Bessie Viator was Chubby and Bessie’s great-granddaughter Wendy Viator’s mother-in-law.

Banana Squares Ingredients

½ cup butter, softened

1½ cups granulated sugar

2 eggs

1 cup sour cream

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

¼ teaspoon salt

2 medium ripe bananas (about 1 cup), mashed

Preheat the oven to 350˚F. In a large mixing bowl, cream the butter and sugar, and then add the eggs, sour cream, and vanilla extract. Set aside. In a medium bowl, combine the flour, baking soda, and salt. Gradually add the dry mixture to the creamed mixture. Stir in the mashed bananas to combine. Spread into a greased 15″ x 10″ x 1″ baking pan. Bake for 20 to 25 minutes or until a toothpick inserted in the center comes out clean.

Banana Squares Frosting Ingredients

1 8-ounce package cream cheese, softened

½ cup butter softened

2 teaspoons vanilla extract

3¾ to 4 cups confectioners’ sugar

How to Make Frosting

With an electric mixer, beat the cream cheese, butter, and vanilla extract until smooth. Gradually add enough confectioners’ sugar to achieve desired consistency. Frost the squares when cool and refrigerate. Makes about 3 dozen.
