Blueberry Muffins Recipe by Jordan Marsh
Before the days of the World Wide Web, this recipe was stealthily passed along as (shhhhh) top secret. The Woodman family actually ended up with two versions but the consensus is that this is the superior one and that these blueberry muffins will be the best you’ll ever make!
Blueberry Muffin Ingredients
2 cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
½ cup butter
1 cup plus 2 tablespoons granulated sugar, divided
2 eggs
½ cup milk
1½ teaspoons vanilla extract
2½ cups blueberries
How to Make Blueberry Muffins
Preheat the oven to 375˚F. Grease a 12-muffin tin pan. In large mixing bowl, combine flour, baking powder, and salt. Set aside. In a separate bowl, cream together butter and 1 cup of sugar, and then add the eggs one at a time, beating after each addition. Add this mixture to the dry ingredients, and then blend in the milk and vanilla extract. Mash ½ cup blueberries and stir in by hand. Add the remaining whole blueberries and stir. Pour batter into greased muffin tins. Sprinkle 2 tablespoons sugar on top and bake for 30 minutes. Cool 15 minutes before removing from tins. Yields 1 dozen muffins.
Recipe Note: Toss the blueberries in a couple of tablespoons of flour before adding to the batter to prevent them from sinking.
