How to Make Fried Parsnips

Peel parsnips, slice thinly lengthwise, and quickly blanch in a small amount of water, almost just to steam them. Drain in a colander. Lay parsnips on a cookie sheet and set aside. Melt butter in a large frying pan and add olive oil, enough to cover the bottom of the pan about a ¼ of an inch. Over medium heat, fry parsnips until lightly browned, adding more butter/oil as needed. Serves 4.

Recipe Notes: Some like them on the crispy side. Typically, a bag will feed four people, but be forewarned that they may be gobbled up before dinner is on the table!
