Honey Mustard Chicken Recipe Ingredients

4 6-ounce boneless, skinless chicken thighs

½ teaspoon salt, divided

½ teaspoon freshly ground black pepper

4 tablespoons Dijon mustard

2 tablespoons honey

1 shallot, minced

1 tablespoon thyme leaves, minced (or ½ teaspoon dried)

1 pound small red potatoes, halved

Cooking spray or extra-virgin olive oil

Honey Mustard Chicken and Potatoes Directions

 

Preheat the oven to 375˚F. Sprinkle the chicken thighs with ¼ teaspoon each salt and pepper. Place in a 9” x 13″ baking dish. Combine mustard, honey, shallot, and thyme in a small bowl until a paste is formed. Spread the mixture over the chicken thighs, covering completely. Place the potatoes around the chicken and spritz with the cooking spray or olive oil. Sprinkle the potatoes with the remaining ¼ teaspoon each salt and pepper. Bake for 50 minutes, stirring the potatoes once. Serves 4.
