“Auntie’s” Crab meat Casserole Recipe
Crab Meat Casserole Ingredients
3 tablespoons butter
2 tablespoons onion, minced
3 tablespoons all-purpose flour
1 teaspoon dry mustard
½ teaspoon paprika
½ cup crushed Ritz crackers
1 tablespoon butter, melted
Salt and pepper to taste
1 teaspoon Worcestershire sauce
1½ cups milk
3 cups fresh or canned crabmeat, picked over for shells
½ cup grated cheese (optional)
To Make the Buttered Crumbs
Crush enough Ritz crackers in a plastic bag with a rolling pin to equal ½ cup.Mix with about 1 tablespoon melted butter—enough to make them moist.
Crab Meat Casserole Directions
Preheat the oven to 350˚F. Melt the butter in a sauté pan; add the onion, cooking until it is soft, but not browned. Blend in the flour and seasonings. Slowly add the milk and cook, stirring constantly, until thickened. Add the crabmeat to the hot sauce. Place in a greased casserole dish. Top with the buttered crumbs, cheese, and paprika. Bake for 30 minutes. Serves 4 to 6.
