Lemon Pie Recipe by Nannie Woodman

Lemon Pie
Chubby’s mother Nannie Woodman was an excellent cook, and there are those who well remember the luscious cakes and pies she sold in her bake shop. Here’s a recipe that has seen its way to countless church fairs and family cookouts.
While Nannie always made her pie shell from scratch, you can use a prepared, 9-inch pie shell or follow the pie crust recipe provided by her great-grandson Steve.
Lemon Pie Ingredients
1 cup granulated sugar
9-inch pie crust*
1 egg
Juice of 1 lemon
1 teaspoon lemon extract
2 heaping tablespoons all-purpose flour
2 tablespoons butter (original recipe says “walnut size”)
1 ½ cups boiling water
How to Make Lemon Pie
Mix all ingredients together and cook in a double boiler stirring constantly until thickened.Cool mixture and fill pie shell, allowing to set. Serves 8.
