Baked Stuffed Lobster

Baked Stuffed Lobster Ingredients

1 to 1½-pound live lobster

¼ lb. cooked lobster (cut into bite sized pieces)

3 to 5 tablespoons clarified butter (divided)

8 ounces Ritz crackers, crushed

6 ounces Milk Lunch crackers, crushed

1 teaspoon fresh parsley, chopped

¼ teaspoon celery salt

¼ teaspoon garlic powder

¼ cup mayonnaise (optional)

How to Make Baked Stuffed Lobster

Preheat the oven to 425˚F. Use a sharp knife or kitchen shears to carefully spilt the lobster down the body and tail. Remove the vein that runs up the center of the tail and body. Remove and reserve the tomalley.

Coat the cavity of the lobster with 1 tablespoon of clarified butter (recipe follows). Place the lobster on a cookie sheet with a small amount of water in the pan. Weigh the tail down with a rock or any heavy, oven-proof object. Bake 8 to 12 minutes, depending on whether the lobster is soft- or hard- shelled. While the lobster is precooking, prepare the cracker crumb stuffing. After the allotted baking time, remove the lobster pan from the oven and set aside.

Cracker Crumb Stuffing Instructions

In a large bowl combine the crushed crackers, parsley, celery salt, and garlic powder. Add the reserved tomalley and mix well. Add 2-4 tablespoons clarified butter and mayonnaise, if desired. Mix thoroughly until there are no lumps. Pack the lobster meat into the body and tail cavity and top with crumbs. Return to the oven and bake for an additional 10 to 15 minutes. Yields 1 serving.

Recipe Notes: You can serve the baked stuffed lobster with additional clarified butter if desired.
